Dr. Taleb Salima, professor in human nutrition at Echahid Cheikh Larbi Tebessi Tebessa University. After obtaining a state engineer diploma in agro-food industries, she obtained a master's degree in applied nutrition in 2002. Taleb Salima joined the applied biology department of the Echahid Cheikh Larbi Tebessi University in Tebessa (Algeria) in 2004. In 2011, she obtained a doctorate in human nutrition from the University of Constantine 1, Algeria. She obtained her university habilitation in 2014. In 2020 she obtained the title of professor in human nutrition. His main interests are in obesity in children, its risk factors, consequences and treatment. She is also interested in the relationship between the consumption of sugary drinks and obesity, the nutritional status of cancer patients, obesity in adults, diabesity, the impact of pathologies during pregnancy on health mother and newborn, polycystic ovary syndrome and obesity.... She is currently working on the detection threshold of fatty taste and obesity.

Dandan Gao gained her bachelor degree about Food Science and Engineering from Henan Agriculture University in 2005, Ph.D. at Nanchang University in 2010, and then carried out scientific research training as post-doctor in in Zhejiang Gongshang University from 2014 to 2016. During 2010-2023, she served as senior scientist and is currently serving as Professor at the College of Life Science and Engineering, Northwest Minzu University. She published papers in core journals in many fields, such as International Journal of Frontiers in Nutrition, International Journal of Food Properties, Food Science and Nutrition, AMB Express, International Journal of Food Properties.

Penghui Guo gained his Master's degree from Northwest Normal University and, a Ph.D. at Lanzhou University. From 2008-2023, he served as a senior scientist at Northwest Minzu University and is currently serving as an Associate Professor at the life science and engineering college, at Northwest Minzu University. He published papers in core journals in many fields, such as Food Science & Nutrition, ANIMAS, Peer J, and the International Journal of Food Properties.

Zifan Wang gained his bachelor's degree from Lanzhou University, his Ph.D. at Wichita State University, and then the University of California carried out scientific research training as post-doctor. From 2017-2021, he served as a senior scientist at the University of Montana and is currently serving as an Associate Professor at the biomedical research center, Northwest Minzu University. He published papers in core journals in many fields, such as the International Journal of Biological Macromolecules, ACS Biomaterials Science & Engineering, Advanced Functional Materials, The Journal of Physical Chemistry B, and Langmuir.
